  • ½ cup milk
  • 1 teaspoon salt
  • ½ teaspoon ground black pepper
  • 1 teaspoon garlic powder
  • 1 medium onion, finely chopped
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • ½ teaspoon paprika
  • ½ cup breadcrumbs (optional)
  • 2 tablespoons fresh parsley, finely chopped (for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C). Boil diced potatoes in salted water until tender (10-12 minutes), then drain.
  2. In a skillet, heat olive oil over medium heat. Cook chicken pieces with salt, pepper, garlic powder, and paprika until browned (6-8 minutes).
  3. In a mixing bowl, combine cooked potatoes, chicken, onion, sour cream, milk, thyme, and half of the cheddar cheese. Mix gently.
  4. Transfer the mixture to a greased 9×13 inch baking dish and top with remaining cheese (and optional breadcrumbs).
  5. Bake for 25-30 minutes until golden brown and bubbly.
