- 4 cups diced potatoes
- 1 pound boneless, skinless chicken breast
- 1 cup shredded cheddar cheese
- 1 cup sour cream
- ½ cup milk
- 1 teaspoon salt
- ½ teaspoon ground black pepper
- 1 teaspoon garlic powder
- 1 medium onion, finely chopped
- 2 tablespoons olive oil
- 1 teaspoon dried thyme
- ½ teaspoon paprika
- ½ cup breadcrumbs (optional)
- 2 tablespoons fresh parsley, finely chopped (for garnish)
Instructions
- Preheat your oven to 375°F (190°C). Boil diced potatoes in salted water until tender (10-12 minutes), then drain.
- In a skillet, heat olive oil over medium heat. Cook chicken pieces with salt, pepper, garlic powder, and paprika until browned (6-8 minutes).
- In a mixing bowl, combine cooked potatoes, chicken, onion, sour cream, milk, thyme, and half of the cheddar cheese. Mix gently.
- Transfer the mixture to a greased 9×13 inch baking dish and top with remaining cheese (and optional breadcrumbs).
- Bake for 25-30 minutes until golden brown and bubbly.
