Ingredients
- 2 chicken breasts (approximately 500g)
- 100g pretzels
- 35g plain flour
- 2 eggs
- Paprika
- Salt
- Garlic powder
- Onion powder
- Oregano
- Black pepper
- Cayenne pepper
- 5 tbsp full-fat mayonnaise
- 3 tbsp honey
- 1 tbsp Dijon mustard
- 1 tbsp classic yellow mustard
- 1 tsp apple cider vinegar
- 1/8 tsp onion powder
- 1/8 tsp garlic powder
Instructions
- Prepare the honey mustard sauce by mixing all sauce ingredients in a bowl; set aside.
- Crush pretzels into coarse crumbs using a food processor or zip-lock bag.
- Set up three shallow dishes: one with flour (mixed with half of the spice blend), one for beaten eggs, and one for pretzel crumbs (mixed with remaining spices).
- Slice chicken into cutlets and coat each piece in flour, then egg, and finally pretzel crumbs.
- Heat oil in a heavy pan until hot (180°C / 350°F) then fry cutlets for 3-4 minutes on each side until golden brown.
- Transfer cooked chicken to a wire rack and let it rest before serving with the sauce.
