- 12 ounces spaghetti
- 1 pound ripe tomatoes, chopped
- 4 cloves garlic, minced
- ¼ cup extra virgin olive oil
- 1 teaspoon salt
- ½ teaspoon ground black pepper
- ½ teaspoon red pepper flakes (adjust to taste)
- Fresh basil leaves for garnish
- Parmesan cheese for serving
Instructions
- Cook spaghetti in a large pot of salted boiling water until al dente (about 8-10 minutes). Reserve some pasta water and drain.
- In a skillet over medium heat, heat olive oil and sauté minced garlic until fragrant (about 30 seconds).
- Add chopped tomatoes, salt, black pepper, and red pepper flakes to the skillet. Cook for 5-7 minutes until tomatoes soften.
- Toss the drained spaghetti into the skillet with the sauce, adding reserved pasta water as needed to achieve desired consistency.
- Stir in fresh basil just before serving and top with grated Parmesan cheese.
