- 1/2 cup white sugar
- 1 large egg
- 2 tsp pure vanilla extract
- 1/2 cup plain canned pumpkin
- 1/4 cup white sugar (for coating)
- 1 1/2 tsp ground cinnamon (for coating)
Instructions
- Whisk together dry ingredients: flour, cornstarch, spices, baking soda, and salt in a bowl.
- In another bowl, beat butter and sugars until fluffy; mix in egg, vanilla extract, and pumpkin until combined.
- Gradually add dry mixture to wet ingredients until a sticky dough forms. Chill for at least 2 hours.
- Preheat oven to 350°F (175°C). Shape dough into balls, roll in cinnamon-sugar mixture, flatten slightly, and place on lined baking trays.
- Bake for 8–10 minutes or until tops are set; cool briefly before transferring to a wire rack.
