  • 16 thick corn tortillas
  • 1 pound Oaxaca cheese (shredded)

Instructions

  1. Prepare the beef birria according to your favorite recipe.
  2. Keep the meat and consomé warm after cooking.
  3. Preheat a cast iron skillet over medium-high heat and lightly coat with cooking spray or oil.
  4. Dip each tortilla in warm consomé on both sides, then cook on the skillet for about 30 seconds per side until warmed.
  5. Assemble by adding cheese and shredded birria to one half of each tortilla, folding it over.
  6. Cook until crispy and golden brown, about 1 minute more.
