- 4 cups shredded beef birria
- 2 cups birria broth (consomé)
- 16 thick corn tortillas
- 1 pound Oaxaca cheese (shredded)
- Optional toppings: diced red onions, chopped cilantro, lime wedges
Instructions
- Prepare the beef birria according to your favorite recipe.
- Keep the meat and consomé warm after cooking.
- Preheat a cast iron skillet over medium-high heat and lightly coat with cooking spray or oil.
- Dip each tortilla in warm consomé on both sides, then cook on the skillet for about 30 seconds per side until warmed.
- Assemble by adding cheese and shredded birria to one half of each tortilla, folding it over.
- Cook until crispy and golden brown, about 1 minute more.
- Serve immediately with optional toppings and warmed consomé for dipping.
