- 3 large eggs
- 1 cup fresh raspberries (plus extra for topping)
- 2 tablespoons all-purpose flour
Instructions
- Preheat oven to 325°F (160°C). In a medium bowl, combine crushed graham crackers, melted butter, and sugar. Press into a greased 9-inch springform pan. Bake for 10 minutes and let cool.
- In a large mixing bowl, beat softened cream cheese until smooth. Gradually add sugar and mix in vanilla extract. Add eggs one at a time, mixing well after each addition.
- Fold in fresh raspberries and flour gently until just combined.
- Pour filling over the cooled crust and smooth the top. Bake for 50-60 minutes until set but slightly jiggly in the center.
- Cool at room temperature for an hour before refrigerating for at least 4 hours or overnight. Top with fresh raspberries before serving.
