- 1 pound fresh mushrooms (cremini, shiitake, or button), sliced
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 4 tablespoons unsalted butter
- 2 tablespoons all-purpose flour
- 4 cups vegetable or chicken broth
- 1 cup heavy cream
- 1 teaspoon thyme (fresh or dried)
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a large pot, melt butter over medium heat. Sauté onions and mushrooms until softened (5-7 minutes). Add garlic and cook for an additional 1-2 minutes.
- Sprinkle flour over the mixture to form a roux. Cook for 1-2 minutes.
- Gradually pour in the broth while whisking to prevent lumps. Simmer for about 10 minutes.
- Stir in heavy cream along with thyme, salt, and pepper; simmer for another 5 minutes on low heat.
- Blend to your desired consistency using an immersion blender.
- Serve warm, garnished with parsley.
