Instructions
- Preheat the oven to 400°F.
- Toss diced sweet potatoes in avocado oil and seasonings; roast for 10 minutes.
- Add seasoned chicken to the baking sheet; roast for an additional 15 minutes until cooked through.
- Massage kale with olive oil, lemon juice, and salt until tender.
- Mix all chipotle sauce ingredients until smooth.
- Assemble bowls: layer rice, kale, chicken, sweet potatoes, avocado, feta, and drizzle with sauce.
