  • 2 large eggs + 1 egg yolk
  • 5 tbsp unsalted butter (melted)
  • 1/3 cup oil (canola or vegetable)
  • 3/4 cup all-purpose flour
  • 3/4 cup Dutch process cocoa powder
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Preheat oven to 400°F. Spread halved cherries on parchment-lined baking sheet, sprinkle with sugar, and roast for about 10 minutes. Let cool.
  2. Lower oven temperature to 325°F and prepare an 8X8 baking pan with non-stick spray and parchment paper.
  3. In a mixing bowl, sift together flour, cocoa powder, cornstarch, and salt; set aside.
  4. In a separate bowl, beat sugar, eggs, and egg yolk until fluffy. Mix in melted butter, oil, and vanilla.
  5. Gently fold in dry ingredients until just combined. Add half of the cooled cherries and chocolate chips; mix gently.
  6. Pour batter into the prepared pan and bake for 40-50 minutes until edges are set but center remains slightly underbaked.
