Ingredients
- 2 cups cherries (washed, pitted, and halved)
- 1 1/3 cups granulated sugar
- 2 large eggs + 1 egg yolk
- 5 tbsp unsalted butter (melted)
- 1/3 cup oil (canola or vegetable)
- 3/4 cup all-purpose flour
- 3/4 cup Dutch process cocoa powder
- 1 cup semi-sweet chocolate chips
Instructions
- Preheat oven to 400°F. Spread halved cherries on parchment-lined baking sheet, sprinkle with sugar, and roast for about 10 minutes. Let cool.
- Lower oven temperature to 325°F and prepare an 8X8 baking pan with non-stick spray and parchment paper.
- In a mixing bowl, sift together flour, cocoa powder, cornstarch, and salt; set aside.
- In a separate bowl, beat sugar, eggs, and egg yolk until fluffy. Mix in melted butter, oil, and vanilla.
- Gently fold in dry ingredients until just combined. Add half of the cooled cherries and chocolate chips; mix gently.
- Pour batter into the prepared pan and bake for 40-50 minutes until edges are set but center remains slightly underbaked.
- Cool completely before slicing; top with remaining roasted cherries before serving.
