  • 2 pounds Yukon Gold potatoes
  • 1 head of garlic
  • 1 cup heavy cream
  • 1 cup whole milk
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon dried thyme
  • 1 cup grated Swiss cheese
  • 1 cup shredded sharp cheddar cheese

Instructions

  1. Preheat the oven to 400°F (200°C). Roast the garlic by cutting off the top, drizzling with olive oil, wrapping in foil, and baking for 30-35 minutes until soft.
  2. In a bowl, mix heavy cream, whole milk, mashed roasted garlic, salt, pepper, thyme, and paprika until well combined.
  3. In a greased 9×13 inch baking dish, layer half of the sliced potatoes followed by half of the cream mixture and half of the cheeses. Repeat the layers.
  4. Cover with foil and bake for 45 minutes; remove foil and bake an additional 20-25 minutes until golden and bubbly.
  5. Let sit for 10 minutes before garnishing with chopped parsley and serving.
