Ingredients
- 2 pounds Yukon Gold potatoes
- 1 head of garlic
- 1 cup heavy cream
- 1 cup whole milk
- 1 teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon dried thyme
- 1 cup grated Swiss cheese
- 1 cup shredded sharp cheddar cheese
Instructions
- Preheat the oven to 400°F (200°C). Roast the garlic by cutting off the top, drizzling with olive oil, wrapping in foil, and baking for 30-35 minutes until soft.
- In a bowl, mix heavy cream, whole milk, mashed roasted garlic, salt, pepper, thyme, and paprika until well combined.
- In a greased 9×13 inch baking dish, layer half of the sliced potatoes followed by half of the cream mixture and half of the cheeses. Repeat the layers.
- Cover with foil and bake for 45 minutes; remove foil and bake an additional 20-25 minutes until golden and bubbly.
- Let sit for 10 minutes before garnishing with chopped parsley and serving.
