- 2 medium sweet potatoes

Instructions
- Preheat your oven to 400°F (200°C).
- Slice sweet potatoes into ½-inch rounds and toss with olive oil, salt, and pepper in a bowl. Arrange on a parchment-lined baking sheet.
- Roast for 25-30 minutes until tender and golden brown, flipping halfway through.
- While roasting, whip softened goat cheese with heavy cream until smooth.
- Once sweet potatoes are done, top each round with whipped goat cheese, cranberries, and pecans.
- Serve immediately and enjoy!
