Instructions
- Preheat your oven to 350°F (175°C). Combine graham cracker crumbs, melted butter, and granulated sugar in a bowl; press into a 9-inch springform pan. Bake for 10 minutes and let cool.
- In a mixing bowl, beat softened cream cheese and sugar until smooth. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract, cinnamon, salt, and sour cream until combined.
- Pour cheesecake filling over the cooled crust and bake for 50-60 minutes or until the edges are set but the center jiggles slightly. Turn off the oven and let it cool inside for an hour before refrigerating for at least 4 hours or overnight.
- For the apple topping, melt butter in a skillet over medium heat. Sauté sliced apples with brown sugar, cinnamon, nutmeg, and lemon juice until tender (about 5-7 minutes). Let cool.
- To make the salted caramel sauce, melt granulated sugar in a saucepan over medium heat until amber-colored; whisk in butter and slowly add heavy cream while stirring until smooth. Mix in sea salt.
- Once chilled, top cheesecake with sautéed apples and drizzle generously with salted caramel before serving.
