  • ¼ cup brown sugar
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon nutmeg
  • 1 tablespoon lemon juice
  • 1 cup granulated sugar (for caramel sauce)
  • 6 tablespoons unsalted butter, cut into pieces
  • ¼ cup heavy cream
  • 1 teaspoon sea salt

Instructions

  1. Preheat your oven to 350°F (175°C). Combine graham cracker crumbs, melted butter, and granulated sugar in a bowl; press into a 9-inch springform pan. Bake for 10 minutes and let cool.
  2. In a mixing bowl, beat softened cream cheese and sugar until smooth. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract, cinnamon, salt, and sour cream until combined.
  3. Pour cheesecake filling over the cooled crust and bake for 50-60 minutes or until the edges are set but the center jiggles slightly. Turn off the oven and let it cool inside for an hour before refrigerating for at least 4 hours or overnight.
  4. For the apple topping, melt butter in a skillet over medium heat. Sauté sliced apples with brown sugar, cinnamon, nutmeg, and lemon juice until tender (about 5-7 minutes). Let cool.
