Ingredients
- 1 ½ cups chocolate cookie crumbs
- ⅓ cup granulated sugar
- ⅓ cup unsalted butter (melted)
- 8 ounces dark chocolate (chopped)
- 1 cup heavy cream
- 2 tablespoons unsalted butter
- 1 cup granulated sugar (for caramel)
- 6 tablespoons unsalted butter (cubed, for caramel)
- ½ cup heavy cream (for caramel)
- 1 teaspoon sea salt
Instructions
- Preheat your oven to 350°F (175°C). Mix cookie crumbs, sugar, and melted butter; press into a tart pan and bake for 10 minutes. Let cool.
- Heat heavy cream in a saucepan until simmering. Pour over chopped dark chocolate and stir until smooth; add butter and mix well.
- Pour ganache into the cooled crust and refrigerate for at least 2 hours.
- In a saucepan, melt sugar until amber; whisk in cubed butter, then gradually add cream while whisking until smooth. Stir in sea salt.
- Pour salted caramel over set ganache; chill for an additional 30 minutes before slicing.
