Ingredients
- 1 lb Italian or chicken sausage
- 2 large sweet potatoes, peeled and cubed
- 1/4 cup honey
- 3 cloves garlic, minced
- 2 tablespoons soy sauce (or tamari)
- 1 tablespoon olive oil
- 1 teaspoon paprika
- Salt and pepper to taste
Instructions
- Peel and cube sweet potatoes.
- In a skillet over medium heat, add olive oil and brown the sausage for about 5-7 minutes until cooked through.
- Add cubed sweet potatoes to the skillet and cook for another 5 minutes.
- In a mixing bowl, combine honey, garlic, soy sauce, paprika, salt, and pepper; pour over the sausage mixture.
- Cover and simmer for about 10 minutes until sweet potatoes are tender.
- Garnish with chopped parsley before serving.
