- 8 ounces fresh mushrooms (sliced)
- 2 tablespoons olive oil
- 3 cloves garlic (minced)
- 1 teaspoon salt
- ½ teaspoon black pepper
- Fresh thyme (1 teaspoon)
- 1 tablespoon lemon juice
- Fresh parsley (for garnish)
Instructions
- Prepare the cauliflower by removing leaves and stem, rinsing it thoroughly, and grating or processing until riced.
- Heat olive oil in a large skillet over medium heat. Add sliced mushrooms with salt and pepper; sauté until golden brown (5–7 minutes).
- Stir in riced cauliflower and minced garlic; cook for another 5–7 minutes until tender.
- Mix in thyme leaves and lemon juice; adjust seasoning as needed.
- Serve warm, garnished with chopped parsley.
