Ingredients
- 4 salmon fillets (about 6 ounces each)
- 2 large zucchini, sliced
- 1 red bell pepper, chopped
- 1 cup cherry tomatoes, halved
- 2 tablespoons olive oil
- 1 lemon (juiced and zested)
- 1 tablespoon honey
- Garlic powder, onion powder, dried oregano, salt, and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a mixing bowl, toss zucchini, bell pepper, and cherry tomatoes with olive oil and seasonings.
- Spread the vegetables on one side of the baking sheet. Place salmon fillets on the other side, drizzling them with olive oil and seasoning.
- In a small bowl, whisk lemon juice, zest, and honey; drizzle half over the salmon.
- Bake for 15-20 minutes until salmon flakes easily and vegetables are tender.
- Drizzle remaining lemon sauce over everything before serving.
