- 1 ½ pounds boneless, skinless chicken breasts
- 1 large red bell pepper
- 1 large green bell pepper
- 1 large onion
- 3 tablespoons olive oil
- 2 tablespoons soy sauce
- 2 tablespoons lemon juice
- 2 teaspoons garlic powder
- 1 teaspoon onion powder
- 1 teaspoon smoked paprika
- 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions
- Preheat oven to 425°F (220°C) and line a sheet pan with parchment paper.
- In a bowl, whisk together olive oil, soy sauce, lemon juice, garlic powder, onion powder, smoked paprika, dried oregano, salt, and pepper.
- Marinate cubed chicken in the mixture for at least 30 minutes.
- Thread marinated chicken and vegetables onto skewers.
- Arrange skewers on the sheet pan without overcrowding.
- Roast for 18-20 minutes until chicken reaches an internal temperature of 165°F (75°C).
- Let cool slightly before serving.
