- 3 medium boneless skinless chicken breasts
- 4 cups low sodium chicken broth
- 5 small red, gold, or brown potatoes (cut into 1-inch pieces)
- 1 small white or yellow onion (diced)
- 2 cans cream-style corn
- 2 cups heavy cream (or half & half for a lighter option)
- 4–6 bacon strips (cooked until crispy)
- Seasonings: garlic powder, salt, and pepper
Instructions
- Combine chicken breasts, chicken broth, potatoes, diced onion, green chiles, and cream-style corn in the slow cooker. Stir well.
- Cover and cook on low for 4 hours.
- Shred the chicken using two forks directly in the pot.
- Stir in heavy cream, garlic powder, crispy bacon, salt, and pepper to taste. Cook for an additional 15-20 minutes until heated through.
- Garnish with fresh parsley before serving hot.
