- 2 1/2 pounds boneless skinless chicken breasts
- 1 tablespoon olive oil
- 3 teaspoons chili powder
- 1 teaspoon salt
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- 1/2 teaspoon smoked paprika
- 2 teaspoons cumin
- 1 cup mild green salsa
- 1/2 cup honey
- 1/2 cup fresh lime juice
Instructions
- Drizzle olive oil over chicken breasts and place them in the slow cooker.
- In a mixing bowl, combine chili powder, salt, onion powder, garlic powder, smoked paprika, and cumin.
- Sprinkle the spice mixture evenly over the chicken.
- Pour salsa, honey, and lime juice over the seasoned chicken.
- Cover and cook on low for 4 to 5 hours until tender.
- Shred the chicken using two forks and return to the slow cooker for an additional 15 to 20 minutes to absorb flavors.
- Serve in tortillas, over rice, or as desired.
