Ingredients
- 4 boneless, skinless chicken breasts
- 1 cup white rice (rinsed)
- 2 cups chicken broth
- 1/4 cup freshly squeezed lemon juice
- 1 tablespoon lemon zest
- 2 cloves garlic (minced)
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- Salt and black pepper to taste
- 1 cup frozen peas
- Fresh parsley for garnish
Instructions
- Place chicken breasts at the bottom of the slow cooker.
- In a medium bowl, mix chicken broth, lemon juice, lemon zest, garlic, oregano, thyme, salt, and pepper until combined.
- Pour the mixture over the chicken and add rinsed rice around it evenly.
- Cover and cook on low for 4–5 hours until chicken is tender.
- In the last 30 minutes of cooking, sprinkle frozen peas on top.
- Stir gently before serving and garnish with parsley and lemon slices.
