  • 2 ½ cups all-purpose flour
  • 1 cup graham cracker crumbs
  • 2 sticks unsalted butter
  • 1 cup granulated sugar
  • 1 cup light brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup mini chocolate chips
  • 1 ½ cups mini marshmallows

Instructions

  1. Preheat your oven to 375°F (190°C) and line baking sheets with parchment paper.
  2. In a medium bowl, whisk together flour, graham cracker crumbs, baking soda, salt, and cinnamon.
  3. In a large bowl, cream together cool butter, granulated sugar, and brown sugar until light and fluffy. Add eggs one at a time followed by vanilla; mix well.
  4. Gradually incorporate the dry ingredients into the wet mixture using a rubber spatula, then fold in mini chocolate chips.
  5. Scoop dough onto prepared baking sheets about 1½ inches apart.
  6. Bake for 6-7 minutes until edges set but centers remain soft. Remove from oven and top each cookie with mini marshmallows and chocolate pieces before returning to bake for another 3-4 minutes.
  7. Allow cookies to cool on the baking sheets for about 5 minutes before transferring to wire racks to cool completely.
