Ingredients
- 2 ½ cups all-purpose flour
- 1 cup graham cracker crumbs
- 2 sticks unsalted butter
- 1 cup granulated sugar
- 1 cup light brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup mini chocolate chips
- 1 ½ cups mini marshmallows
Instructions
- Preheat your oven to 375°F (190°C) and line baking sheets with parchment paper.
- In a medium bowl, whisk together flour, graham cracker crumbs, baking soda, salt, and cinnamon.
- In a large bowl, cream together cool butter, granulated sugar, and brown sugar until light and fluffy. Add eggs one at a time followed by vanilla; mix well.
- Gradually incorporate the dry ingredients into the wet mixture using a rubber spatula, then fold in mini chocolate chips.
- Scoop dough onto prepared baking sheets about 1½ inches apart.
- Bake for 6-7 minutes until edges set but centers remain soft. Remove from oven and top each cookie with mini marshmallows and chocolate pieces before returning to bake for another 3-4 minutes.
- Allow cookies to cool on the baking sheets for about 5 minutes before transferring to wire racks to cool completely.
