Instructions
- In a mixing bowl, combine softened cream cheese, powdered sugar, crushed chocolate cookies, and vanilla extract. Mix until smooth.
- Scoop out portions of the mixture and roll into 1-inch balls. Place on a parchment-lined baking sheet and freeze for 30 minutes.
- Melt chocolate chips with coconut oil in a microwave-safe bowl in 30-second intervals until smooth.
- Dip each truffle in melted chocolate, letting excess drip off before returning to the baking sheet.
