Instructions
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
- In a large bowl, cream softened butter and granulated sugar until light and fluffy.
- Beat in the egg, lemon juice, lemon zest, and vanilla extract until combined.
- Gradually mix in the dry ingredients until just combined.
- Using a cookie scoop or spoon, drop dough onto prepared sheets with space in between.
- Bake for 10-12 minutes or until edges are lightly golden.
- Cool on sheet for 5 minutes before transferring to wire racks and dusting with powdered sugar.
