Ingredients
- 3 cups shredded or diced cooked chicken
- 1 can (14.5 oz) black beans, rinsed and drained
- 1 cup corn (fresh or canned)
- 1 red bell pepper, diced
- ⅓ cup diced red onion
- ¼ cup fresh cilantro, chopped
- ½ cup sour cream
- Juice of 1 large lime
- 1–2 teaspoons hot sauce
- ½ teaspoon chili powder
- ½ teaspoon ground cumin
- ¼ teaspoon kosher salt
Instructions
- In a small bowl, whisk together sour cream, lime juice, hot sauce, chili powder, cumin, and salt until smooth.
- In a large mixing bowl, combine the shredded chicken, black beans, corn, red bell pepper, red onion, and cilantro.
- Add the dressing to the salad mixture and toss until everything is well-coated.
- Cover and chill in the refrigerator for at least one hour before serving to let flavors meld.
