Ingredients
- 410 grams all-purpose flour
- 290 grams water
- 160 grams sourdough starter
- 8 grams salt
Instructions
- In a large bowl, combine water, sourdough starter, and salt. Mix well.
- Add flour and mix until combined; knead slightly by hand.
- Cover and let rest for 30 minutes.
- Perform stretch and folds every 20 minutes for an hour.
- Let the dough rise for 3–4 hours until doubled in size.
- Shape the dough into a ball and place seam-side up in a floured basket; proof for 2 hours.
- Preheat your oven to 460°F (238°C) with a Dutch oven inside.
- Score the dough and bake covered for 30 minutes, then uncovered for another 10 minutes.
