- 410 grams all-purpose flour
- 290 grams water
- 160 grams sourdough starter
- 8 grams salt
Instructions
- In a large bowl, combine water, sourdough starter, and salt. Stir to mix well.
- Gradually add flour until combined; use your hands to incorporate fully.
- Cover the dough and let it rest for 30 minutes.
- Perform stretch and folds every 20 minutes for an hour, then let rise until nearly doubled (3–4 hours).
- Shape the dough into a ball and place seam-side up in a floured banneton; proof for another 2 hours.
- Preheat your oven to 460°F (238°C) with a dutch oven inside.
- Score the dough and bake covered for 30 minutes; remove lid and bake an additional 10 minutes.
- Cool on a rack before slicing.
