  4. Perform stretch and folds every 20 minutes for an hour, then let rise until nearly doubled (3–4 hours).
  5. Shape the dough into a ball and place seam-side up in a floured banneton; proof for another 2 hours.
  6. Preheat your oven to 460°F (238°C) with a dutch oven inside.
  7. Score the dough and bake covered for 30 minutes; remove lid and bake an additional 10 minutes.
  8. Cool on a rack before slicing.
