Ingredients
- 10 ounces penne pasta
- 1 pound diced chicken breast
- 1 tablespoon olive oil
- 2 teaspoons minced garlic
- 1 can (14 ounces) diced tomatoes, drained
- ½ cup heavy cream
- 1 cup spinach, roughly chopped
- ½ cup grated Parmesan cheese
Instructions
- Cook the penne pasta in salted boiling water until al dente. Drain and set aside.
- In a large skillet over medium heat, heat olive oil and cook the seasoned chicken until browned.
- Sauté garlic and red pepper flakes in the same skillet until fragrant.
- Stir in diced tomatoes and tomato paste; simmer before adding heavy cream until thickened.
- Combine cooked chicken, spinach, and penne in the skillet; mix well with melted Parmesan cheese.
- Serve warm with additional Parmesan and fresh basil.
