Ingredients
- 2 tablespoons olive oil or unsalted butter
- 2 pounds sweet onions (Vidalia recommended)
- 1 cup apple juice or unsweetened apple cider
- ½ cup apple cider vinegar
- 1 cup honey
- ½ cup brown sugar
- 2 teaspoons minced garlic
- 1 teaspoon coarse salt
- ½ teaspoon ground black pepper
- ¼ teaspoon dry mustard powder
- 1 teaspoon crushed red pepper flakes (adjust to taste)
Instructions
- Peel and thinly slice the onions to yield about 6 cups.
- In a large heavy-bottomed pot, heat oil or butter over medium heat. Add onions, apple juice, vinegar, garlic, salt, pepper, mustard powder, and red pepper flakes. Cook until onions soften (5–7 minutes).
- If using pectin for thickness, stir it in now and bring to a full boil.
- Add honey and brown sugar; return to a rolling boil for 1 minute while stirring continuously until thickened.
- Remove from heat and skim off foam if necessary.
