  • 2 tablespoons olive oil or unsalted butter
  • 2 pounds sweet onions (Vidalia recommended)
  • 1 cup apple juice or unsweetened apple cider
  • ½ cup apple cider vinegar
  • 1 cup honey
  • ½ cup brown sugar
  • 2 teaspoons minced garlic
  • 1 teaspoon coarse salt
  • ½ teaspoon ground black pepper
  • ¼ teaspoon dry mustard powder
  • 1 teaspoon crushed red pepper flakes (adjust to taste)

Instructions

  1. Peel and thinly slice the onions to yield about 6 cups.
  2. In a large heavy-bottomed pot, heat oil or butter over medium heat. Add onions, apple juice, vinegar, garlic, salt, pepper, mustard powder, and red pepper flakes. Cook until onions soften (5–7 minutes).
  3. If using pectin for thickness, stir it in now and bring to a full boil.
  4. Add honey and brown sugar; return to a rolling boil for 1 minute while stirring continuously until thickened.
  5. Remove from heat and skim off foam if necessary.
