Ingredients

  • 1 package (12 ounces) wonton wrappers
  • 1 cup fresh spinach, chopped
  • 1 can (14 ounces) artichoke hearts, drained and chopped
  • 8 ounces cream cheese, softened
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 teaspoon lemon juice
  • 1 teaspoon salt
  • ½ teaspoon ground black pepper
  • Cooking spray or olive oil for greasing

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Lightly grease a muffin tin with cooking spray or olive oil. Press a wonton wrapper into each muffin cup.
  3. In a skillet over medium heat, cook the chopped spinach until wilted (about 2-3 minutes). Remove from heat and let cool slightly.
  4. In a large bowl, combine the cooked spinach, chopped artichokes, cream cheese, mozzarella cheese, Parmesan cheese, minced garlic, lemon juice, salt, and pepper. Mix until well combined.
  5. Spoon the filling into each wonton cup until nearly full.
  6. Bake for 15-20 minutes or until golden brown and bubbly.
