- 1 packet instant vanilla pudding mix (3.4 ounces)
- 1 teaspoon peppermint extract
- ½ cup green food coloring
- 1 cup crushed Oreo cookies
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
- Beat in the eggs one at a time, then add vanilla and peppermint extracts.
- In another bowl, whisk together flour, baking soda, salt, and pudding mix. Gradually incorporate this into the wet mixture until combined.
- Add green food coloring to the dough until you achieve your desired shade.
- Fold in crushed Oreo cookies gently.
- Use a cookie scoop to drop dough onto the prepared baking sheet, spacing them about two inches apart.
- Bake for 10-12 minutes until edges are set but centers remain soft. Cool on a wire rack.
