Ingredients
- 1 ¾ cups all-purpose flour
- 2 cups granulated sugar
- ¾ cup unsweetened cocoa powder
- 1 ½ teaspoons baking powder
- 1 ½ teaspoons baking soda
- 1 teaspoon salt
- 2 large eggs
- 1 cup whole milk
- ½ cup vegetable oil
- 2 teaspoons vanilla extract
- 1 cup boiling water
- 1 cup unsalted butter, softened
- 4 cups powdered sugar
- 2 teaspoons peppermint extract
- 3–4 tablespoons heavy cream
- 8 ounces bittersweet chocolate, chopped
Instructions
- Preheat the oven to 350°F (175°C) and grease two 9-inch round cake pans.
- In a mixing bowl, combine flour, sugar, cocoa powder, baking powder, baking soda, and salt. Add eggs, milk, oil, and vanilla; beat for 2 minutes. Stir in boiling water until smooth.
- Pour batter into prepared pans and bake for 30-35 minutes until a toothpick comes out clean. Cool in pans for 10 minutes before transferring to wire racks.
- For the mint frosting, beat softened butter until creamy; gradually add powdered sugar and peppermint extract until smooth.
- Frost cooled cake layers with mint frosting; drizzle with chocolate ganache.
