- 9 cups Rice Chex cereal
- 1 cup semi-sweet chocolate chips
- ½ cup creamy peanut butter
- ¼ cup unsalted butter
- 1 teaspoon peppermint extract
- ½ teaspoon green food coloring (optional)
- 1 ½ cups powdered sugar
Instructions
- In a large mixing bowl, place the Rice Chex cereal and set aside.
- In a microwave-safe bowl, combine chocolate chips, peanut butter, and butter. Microwave in 30-second intervals, stirring until melted and smooth. Stir in peppermint extract and green food coloring.
- Pour the mixture over the cereal and gently stir to coat evenly.
- Transfer to a resealable plastic bag with powdered sugar, seal tightly, and shake until coated.
- Spread onto a parchment-lined baking sheet, sprinkle mini chocolate chips on top, and allow to cool completely before serving.
