Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a mixing bowl, combine the granulated sugar and vegetable oil until smooth. Add eggs and vanilla; mix until well blended.
- In another bowl, whisk together baking powder, salt, and flour. Gradually add to the wet mixture until combined.
- Stir in green food coloring until you reach your desired shade.
- Chill the dough for about 30 minutes to make shaping easier.
- Scoop dough into balls, roll in powdered sugar, and place on the prepared baking sheet, spaced apart.
- Bake for 10-12 minutes or until edges are set and tops have crinkled.
- Cool on the baking sheet before transferring to a wire rack.
