Ingredients
- 6 cups Rice Krispies cereal
- 4 tablespoons unsalted butter
- 10 ounces mini marshmallows
- 1 teaspoon mint extract
- 1 cup semisweet chocolate chips
- Green food coloring (optional)
- 1 cup white chocolate chips (for drizzling)
Instructions
- Melt the butter in a large pot over low heat. Stir in the mini marshmallows until melted and smooth, then remove from heat.
- Mix in the mint extract and optional green food coloring until desired shade is achieved.
- Gently fold in the Rice Krispies until evenly coated.
- Add the semisweet chocolate chips and mix to distribute.
- Press the mixture into a greased 9×13 inch baking dish using a spatula or wax paper.
- Melt white chocolate chips in a microwave-safe bowl, drizzle over the pressed mixture.
- Allow to cool completely before cutting into squares.
