- 1 cup brown sugar, packed
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup mint chocolate kisses, unwrapped
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a medium bowl, whisk together flour, baking soda, salt, and cocoa powder.
- In a large bowl, cream together softened butter, granulated sugar, and brown sugar until fluffy.
- Beat in eggs one at a time and then add vanilla extract; mix until smooth.
- Gradually combine dry ingredients with the wet mixture on low speed until just mixed.
- Scoop rounded balls of dough onto the prepared baking sheet, spacing them two inches apart.
- Bake for 10-12 minutes until edges are set; press a mint chocolate kiss into each cookie immediately after baking.
- Allow cookies to cool slightly before transferring to a wire rack.
