Instructions
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a mixing bowl, cream together softened butter, granulated sugar, and brown sugar until light and fluffy.
- Add eggs one at a time, mixing well after each addition; then stir in vanilla extract.
- Mix in the pistachio pudding mix until combined.
- Whisk together flour, baking soda, and salt in a separate bowl; gradually incorporate into wet mixture until just combined.
- Fold in chopped pistachios and white chocolate chips if using.
- Drop rounded balls of dough onto the prepared baking sheet, spacing them about 2 inches apart; sprinkle with green decorations if desired.
- Bake for 10-12 minutes or until edges are lightly golden while centers remain soft.
- Let cool on the baking sheet for 5 minutes before transferring to a wire rack.
