Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13 inch baking pan and line it with parchment paper.
  2. Melt the butter in a saucepan over low heat. Stir in sugar until combined, then add eggs one by one followed by vanilla extract.
  3. In a separate bowl, sift together flour, cocoa powder, salt, and baking powder. Gradually mix into the wet ingredients until fully incorporated.
  4. Pour batter into the prepared pan and bake for 25-30 minutes or until a toothpick comes out with moist crumbs. Allow cooling completely.
  5. For the mint frosting, combine powdered sugar, milk, peppermint extract, and optional food coloring; beat until smooth. Spread over cooled brownies.
  6. To make ganache, heat cream until simmering; remove from heat and stir in chocolate until smooth. Pour over frosting layer and let set before slicing.
