- 1 cup unsalted butter
- 2 cups granulated sugar
- 4 large eggs
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1 cup unsweetened cocoa powder
- 1/2 teaspoon salt
- 1/2 teaspoon baking powder
- 1 cup powdered sugar
- 2 tablespoons milk
- 1 teaspoon peppermint extract
- green food coloring (optional)
- 4 ounces semisweet chocolate, chopped
- 1/2 cup heavy cream
Instructions
- Preheat oven to 350°F (175°C). Grease a 9×13 inch baking pan and line it with parchment paper.
- Melt the butter in a saucepan over low heat. Stir in sugar until combined, then add eggs one by one followed by vanilla extract.
- In a separate bowl, sift together flour, cocoa powder, salt, and baking powder. Gradually mix into the wet ingredients until fully incorporated.
- Pour batter into the prepared pan and bake for 25-30 minutes or until a toothpick comes out with moist crumbs. Allow cooling completely.
- For the mint frosting, combine powdered sugar, milk, peppermint extract, and optional food coloring; beat until smooth. Spread over cooled brownies.
- To make ganache, heat cream until simmering; remove from heat and stir in chocolate until smooth. Pour over frosting layer and let set before slicing.
