- 4 cups fresh or frozen blueberries
- 1 cup sugar
- 1/4 cup quick-cooking tapioca
- 1 tablespoon lemon juice
- 9-inch pie crust (homemade or store-bought)
- 2 tablespoons butter
- Pinch of salt
Instructions
- Preheat the oven to 400°F (200°C).
- Roll out half of the pie dough on a floured surface and fit it into a 9-inch pie plate. Chill while preparing the filling.
- In a mixing bowl, combine blueberries, sugar, tapioca, lemon juice, and salt; let sit for 15 minutes.
- Pour filling into the chilled crust, dot with butter, and bake for 20 minutes at 400°F. Reduce heat to 350°F (175°C) and bake for an additional 25–30 minutes until bubbly.
- Cool on a wire rack before adding star-shaped cutouts made from the remaining dough on top.
