- 1 1/2 cups all-purpose flour
- 1 (3.4 oz) instant lemon pudding mix
- 3 eggs
- 1 cup sugar
- 2 tablespoons butter, softened
- 1 teaspoon vanilla extract
- 1/3 cup fresh lemon juice
- 3/4 cup plain Greek yogurt
- Zest of 1 lemon
Instructions
- Preheat oven to 350°F (175°C) and prepare a 5 x 9-inch loaf pan with parchment paper.
- In one bowl, whisk together flour, pudding mix, baking powder, baking soda, and salt.
- In another bowl, use a mixer to combine eggs, sugar, butter, vanilla extract, lemon extract, lemon juice, vegetable oil, and Greek yogurt until smooth.
- Gradually fold the dry ingredients into the wet mixture and add lemon zest.
- Pour batter into the prepared pan and bake for about 55 minutes or until a toothpick comes out clean.
- Allow to cool before adding frosting made from butter, powdered sugar, lemon juice, and lemon extract.
