- 16 oz cream cheese, softened
- ½ cup granulated sugar
- 1 tsp vanilla extract
- ½ cup sour cream
- 2 large eggs
- ½ cup strawberry puree or jam
- 1 ½ cups crushed graham crackers or golden Oreos
- ¼ cup unsalted butter, melted
- 1 cup crushed golden Oreos or vanilla wafer cookies
- ½ cup freeze-dried strawberries, crushed
Instructions
- Preheat your oven to 325°F (163°C) and line a mini muffin tin with parchment paper.
- Prepare the crust by mixing crushed graham crackers with melted butter and pressing it into the bottom of each muffin cup.
- In a separate bowl, beat together cream cheese and sugar until smooth. Add eggs one at a time, then mix in sour cream, vanilla, and strawberry puree.
- Pour the cheesecake mixture over the crusts and bake for about 20-25 minutes for mini bites or until set but slightly jiggly.
- Cool completely before refrigerating for at least four hours to firm up.
- Mix together the topping ingredients and sprinkle over the chilled cheesecake bites before serving.
