Ingredients
- 6 bell peppers (any color)
- 1 ½ lbs ground beef (90% lean)
- 1 cup cooked white rice
- ½ cup onion (finely chopped)
- 2 tsp garlic (minced)
- 15 oz can tomato sauce
- 1 ½ cups mozzarella cheese (shredded)
- Olive oil, salt, pepper, and Italian seasoning
Instructions
- Preheat oven to 350°F (175°C) and grease a baking dish.
- Prepare bell peppers by slicing tops off and removing seeds. Place cut-side down in the baking dish with water.
- Bake covered with foil for 25 minutes.
- In a skillet, heat olive oil over medium heat. Cook ground beef with salt and pepper until browned; add onion and garlic until softened.
- Mix in cooked rice, tomato sauce, Italian seasoning, and half of the mozzarella cheese.
- Remove baked peppers from the oven, drain excess water, and fill them with the meat mixture.
- Top with remaining cheese and bake covered for another 20 minutes; remove foil and bake uncovered for an additional 10 minutes until cheese is bubbly.
- Let cool slightly before serving.
