  • 6 bell peppers (any color)
  • 1 ½ lbs ground beef (90% lean)
  • 1 cup cooked white rice
  • ½ cup onion (finely chopped)
  • 2 tsp garlic (minced)
  • 15 oz can tomato sauce
  • 1 ½ cups mozzarella cheese (shredded)
  • Olive oil, salt, pepper, and Italian seasoning

Instructions

  1. Preheat oven to 350°F (175°C) and grease a baking dish.
  2. Prepare bell peppers by slicing tops off and removing seeds. Place cut-side down in the baking dish with water.
  3. Bake covered with foil for 25 minutes.
  4. In a skillet, heat olive oil over medium heat. Cook ground beef with salt and pepper until browned; add onion and garlic until softened.
  5. Mix in cooked rice, tomato sauce, Italian seasoning, and half of the mozzarella cheese.
  6. Remove baked peppers from the oven, drain excess water, and fill them with the meat mixture.
  7. Top with remaining cheese and bake covered for another 20 minutes; remove foil and bake uncovered for an additional 10 minutes until cheese is bubbly.
  8. Let cool slightly before serving.
