- 4 large baking potatoes
- 1 pound boneless, skinless chicken breasts, diced
- 1 cup shredded cheddar cheese
- ½ cup sour cream
- 1 cup broccoli florets, steamed
- 2 tablespoons olive oil
- Seasonings: salt, black pepper, smoked paprika
Instructions
- Preheat oven to 400°F (200°C). Pierce potatoes with a fork and bake for 45-60 minutes until tender.
- In a skillet over medium heat, cook diced chicken with olive oil, salt, black pepper, and smoked paprika for about 8-10 minutes until cooked through.
- In a bowl, combine the cooked chicken with broccoli, cheddar cheese, sour cream, and half of the green onions.
- Once the potatoes are baked and slightly cooled, cut them open and scoop out some flesh. Fill them generously with the chicken mixture.
- Return stuffed potatoes to the oven for an additional 10 minutes until heated through and cheese is melted.
