- 2 large sweet potatoes

Instructions
- Preheat the oven to 425°F (220°C).
- Slice sweet potatoes thinly and toss with olive oil, salt, pepper, and paprika on a baking sheet.
- Roast for 20-25 minutes, flipping halfway through until tender and crispy.
- Layer roasted sweet potatoes on a platter; top with black beans and shredded cheese.
- Broil for 2-3 minutes until the cheese is bubbly and golden.
- Garnish with avocado and cilantro; serve with lime wedges.
