Ingredients
- 4 large sweet potatoes
- 1 can (15 ounces) butter beans, drained and rinsed
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- Salt & pepper to taste
- Fresh parsley & lemon juice for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- Wash the sweet potatoes, pierce them with a fork, and roast on a baking sheet for 45-50 minutes until tender.
- In a medium bowl, mix butter beans with olive oil, garlic powder, smoked paprika, salt, and pepper.
- Spread the butter bean mixture on another baking sheet and bake for 15-20 minutes until crispy.
- Slice open the roasted sweet potatoes, fluff their insides with a fork, top with crunchy butter beans, drizzle with lemon juice, and garnish with parsley.
