- 4 (6-ounce) cod fillets
- 1 can (14 ounces) full-fat coconut milk
- 1 cup chicken broth
- 1 tablespoon fish sauce
- 1 tablespoon fresh lime juice
- 2 cloves garlic, minced
- 1–2 Thai bird chilies, sliced (optional)
- 1 tablespoon brown sugar
- Zest of 1 lime
- 2 cups fresh spinach leaves
- Fresh cilantro for garnish
- Lime wedges for serving
Instructions
- In a large skillet, combine coconut milk, chicken broth, fish sauce, lime juice, minced garlic, sliced chilies (if using), brown sugar, and lime zest. Bring to a simmer over medium heat.
- Gently add cod fillets to the skillet. Reduce heat to low and cover. Poach for 8-10 minutes until fish flakes easily.
- Stir in spinach during the last few minutes of cooking until wilted.
- Serve cod on plates with coconut broth and spinach on top. Garnish with fresh cilantro and lime wedges.
