  • 1 can (14 ounces) full-fat coconut milk
  • 1 cup chicken broth
  • 1 tablespoon fish sauce
  • 1 tablespoon fresh lime juice
  • 2 cloves garlic, minced
  • 12 Thai bird chilies, sliced (optional)
  • 1 tablespoon brown sugar
  • Zest of 1 lime
  • 2 cups fresh spinach leaves
  • Fresh cilantro for garnish
  • Lime wedges for serving

Instructions

  1. In a large skillet, combine coconut milk, chicken broth, fish sauce, lime juice, minced garlic, sliced chilies (if using), brown sugar, and lime zest. Bring to a simmer over medium heat.
  2. Gently add cod fillets to the skillet. Reduce heat to low and cover. Poach for 8-10 minutes until fish flakes easily.
  3. Stir in spinach during the last few minutes of cooking until wilted.
  4. Serve cod on plates with coconut broth and spinach on top. Garnish with fresh cilantro and lime wedges.
