Ingredients
- ½ cup olive oil
- ¼ cup fresh lemon juice
- 4 cloves garlic, minced
- 2 tablespoons Dijon mustard
- 2 tablespoons honey
- 1 tablespoon soy sauce
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 1 teaspoon salt
- ½ teaspoon ground black pepper
- 4 skinless chicken thighs or breasts
Instructions
- In a mixing bowl, whisk together olive oil, lemon juice, garlic, Dijon mustard, honey, soy sauce, oregano, thyme, salt, and pepper.
- Place chicken in a resealable bag or shallow dish and pour marinade over it; ensure it's well coated. Seal the bag or cover the dish and refrigerate for at least 1 hour (up to 4 hours).
- Preheat your oven to 375°F (190°C).
- Remove chicken from the marinade and place it in a baking dish. Discard any remaining marinade and bake for about 25-30 minutes or until internal temperature reaches 165°F (75°C) and chicken is golden brown.
- Let the chicken rest for a few minutes before serving warm.
