- 1 pound mushrooms, finely chopped
- 1 cup cooked green or brown lentils
- 2 cups fresh spinach, chopped
- 1 large onion, finely chopped
- 3 cloves garlic, minced
- 1 package puff pastry, thawed
- Olive oil, soy sauce, nutritional yeast, thyme, smoked paprika
Instructions
- Preheat oven to 400°F (200°C).
- In a skillet, heat olive oil and sauté onions and garlic until soft.
- Add mushrooms; cook until browned. Stir in spinach until wilted.
- Combine vegetables with lentils, thyme, smoked paprika, soy sauce, salt, and pepper in a bowl.
- Roll out puff pastry and spoon filling into the center. Fold pastry over to seal.
- Brush with plant-based egg wash and bake for 25-30 minutes until golden.
