Ingredients
- 180g warm water
- 7g active dry yeast
- 60g honey
- 120g whole wheat flour
- 343g bread flour
- 180g sourdough discard
- 10g salt
- 60g olive oil
Instructions
- Activate the yeast by combining warm water, honey, and yeast in a mixing bowl. Let sit for 5 minutes until bubbly.
- Mix in remaining ingredients until combined. Knead for about 15 minutes until the dough is soft and elastic.
- Allow the dough to rise in a warm place until doubled in size (40 minutes to 1 hour).
- Shape into loaves and place in greased loaf pans. Let rise again until doubled (30 minutes to 1 hour).
- Preheat oven to 350°F and bake for 35-40 minutes until golden brown and reaching an internal temperature of 190°F.
- Cool on a rack before slicing.
