Ingredients
- 1 1/4 cups milk
- 3/4 cup coconut milk
- 2 tbsp cornstarch
- 2 tbsp granulated sugar
- 1/4 tsp salt
- 1 egg
- 1 tbsp butter
- 1/4 tsp vanilla extract
- 1/2 cup toasted sweetened coconut
Instructions
- In a medium saucepan, whisk together cornstarch, sugar, and salt.
- In a separate bowl, beat the egg until lightened in color; add milk and coconut milk, then whisk thoroughly.
- Pour the wet ingredients into the dry mixture in the saucepan. Cook over medium heat while whisking frequently until thickened and bubbles form.
- Remove from heat; stir in butter and vanilla extract. Let cool slightly while stirring to prevent a film from forming.
- Strain through a fine sieve into another container, then refrigerate until set.
- Once chilled, mix in toasted coconut before serving.
