- 3 cups mixed fresh berries (blueberries, strawberries, raspberries)
- 1 & 3/4 cups graham cracker crumbs
- 5 tablespoons unsalted butter, melted
- 16 ounces cream cheese, at room temperature
- 3/4 cup granulated sugar
- Juice of 1 medium lemon
- 1 cup heavy cream
Instructions
- Combine graham cracker crumbs and melted butter in a bowl; press into the base of a springform pan. Chill.
- Blend berries with 3 tablespoons sugar until slightly chunky.
- Beat cream cheese, remaining sugar, and lemon juice until smooth; fold in berry mixture.
- Whip heavy cream until soft peaks form; gently fold into the cream cheese mixture.
- Pour filling over crust; refrigerate for at least 8 hours or overnight.
- Serve garnished with extra berries and whipped cream.
